Hearty Healthy Chicken & Spinach Penne

Here is an easy dish you can put together for dinner in less than 30 minutes. Using generic or store-brand versions of mushrooms, spinach, pasta and even the Alfredo Sauce, or picking up your favorite brands on sale, you’ll be able to satisfy appetites and save money at the same time.

What You Need:

Chicken Tenderloins (1/2 package=6-7 strips)
1/2 tsp balsamic vinegar
1 tbs Olive Oil
1 tsp kosher salt (plus table salt for pasta water)
1 tsp coarse ground black pepper
1 clove garlic, crushed
1/2 can chopped spinach (drained well)
1 can mushroom pieces (drained)
1/2 jar Alfredo Sauce
1/2 box Penne Pasta (whole wheat, if you want to a healthier alternative)

What You Do:

-Start heating water for pasta, add salt.
-Cut tenderloins into bite size pieces, remove questionable bits

-Start cooking pasta when water comes to a full boil

-Heat olive oil in skillet, on med-high and brown chicken thoroughly

-Add crushed garlic, balsamic vinegar, salt, pepper, spinach and mushroomsContinue cooking on medium heat for 1-2 minutes, til spinach and mushrooms are heated through
-Add 1/2 jar of Alfredo Sauce

-Stir to combine all ingredients thoroughly.
-Cook an additional 2-3 minutes to combine flavors

-Drain pasta well, and add to skillet. Stir, flip and generally mix the whole mess together!

-Plate up, top with shredded parm and serve with garlic bread
